Pairing is like marriage, in fact it is the art of marrying food, but unlike a life-long commitment, it is a momentary and fleeting pleasure that rewards with the most amazing experience. Pairing with wine is better known, but this art is applied to all drinks, perhaps the most extraordinary is with tea, as it is a drink with so much history behind it.


Complexity and perfection are two trapping qualities and tea has both. According to Chinese tradition there are three decisive factors to make this drink perfect: the water, the kettle and the way it is heated. In fact, it is said that coal is the friend, the kettle is the father, and water is the mother of tea.


Water itself, like all mothers, is vital for the drink to come out perfect. Lu Yu, Tea Master (733-804) indicated that the highest quality water is the one that slides slowly through the stalagmites; then the rain and then the one that comes from the mountain. In this case the worst is the well or lake, because it does not have the dynamism of the previous ones. This alone already demonstrates the complexity of the tea and what its perfection is due to.
